During evening service the restaurant steps away from more familiar constructs, offering a menu written daily and directed by the agricultural output before us. The food is straightforward, cooked and presented without bells and whistles, and meant to reflect a respect for perfect raw materials. We treat foods carefully and minimally, offering few extraneous sauces and garnishes or elaborate and precious technique. We believe that good food is beautiful and delicious on its own. Our job is to preserve and amplify what nature gave us, not transform it.
